Old School Leche Flan & Choose Your Own Flavor

 Ingredients
Flan:
1 3/4 cup evaporated milk
3/4 cup sugar
1/2 cup egg yolks
1 tablespoon vanilla or you may use 1/2 tablespoon ube oil flavoring or 1/2 tbsp. coffee oil flavoring etc.

Caramel Syrup:
10 tablespoon sugar
1/4 cup water
 



Instructions
Caramel Syrup Procedure:

In a aluminum oval pan, place 10 tbsp. sugar and 1/4 cup water under stove low fire.
Allow to boil until all sugar dissolves. Add water if it appears to be too thick. Be careful this is very hot. And be careful not to burn the syrup. If it burns just add little water and stir. Remove from flame and set aside.

Plan Procedure:
Do not heat this mixture to obtain a smooth consistency. Mix the egg yolks and sugar in a bowl. Add milk and stir. Pour in the egg yolk and milk mixture to the oval pan with prepared thick caramel syrup and cover with wax paper and use rubber band to fasten it or you may use aluminum foil. Steam for 60 minutes. Cool and invert on a platter.

It has a creamy yummy flavor and not too sweet since sugar was used instead of condensed milk. Condensed milk tends to be too sweet.
